You probably can tell by now, we love to cook in our family and try out new recipes every now and then. But often times, we stick to the traditional and classic dishes like adobo. Adobo is a very common dish in the Philippines and is usually made from pork or chicken. It has a sauce that is made from a combination of vinegar, soy sauce, garlic and pepper. For last night’s dinner, we cooked what we call in our home, the ultimate adobo.

For the meat, we use pork belly (it’s a pork fat thing!). The pork is slow-cooked in the sauce until it becomes very tender and most of the liquid evaporated. Then we add quail eggs and chicken liver. Very tasty! If you’re a Filipino, you’re probably craving for adobo right now just by reading this.
